Lemons!

So what do we do when we have too many lemons? Well, we freeze the juice so we can always make lemonade!

The lemons are ripe, so it’s time to start picking them. I love to freeze the juice in ice cubes. They can be used to brighten many recipes, and beverages. Sometimes when I am feeling like I have a cold coming on, I sip on a hot cup of water with a bit of lemon. Since I freeze the juice in cubes, I can quickly find the juice whenever I need it.

After the juice is frozen solid, I can remove the cubes in put them in a freezer safe bag. I label the bag with the date, but I usually use up the cubes before the next season. I also freeze the lemon juice in 1-2 cup quantities. This way we can have lemonade whenever we have that urge for something sweet, yet tangy. I do sift out the pulp because our large beverage containers get clogged up if we leave the pulp.

There are many uses for lemons.. One of my favorites, while it may take a while, is to make limoncello. This requires some patience because you do need to very carefully peel many lemons. Always be sure that you are using organic lemon, and that they have been washed an dried. Be sure to remove only the zest.

To make limoncello, you will need 8 large lemons. You will need a large jar, 1 gallon size will do nicely, be sure that it has a tight lid. Place the lemon peels in the jar. Next add the alcohol, a strong vodka is best. Place the jar in a dark place, but be sure to shake it up every few days. After 40 days, strain the beverage to remove all the peels. Using a funnel, pour the liquor into smaller bottles, with tight corks. These can be given as gifts. It makes a nice present, especially if presented with a couple of painted ceramic Italian glasses.

Some people prefer the sweeter version of limoncello, if that is the case add simple syrup to taste. I prefer mine with a little cream. Yummy! Whichever way you like it, sweetened or not, be sure to serve it ice cold!
